Fig Balsamic Vinaigrette Salad Dressing ;
It only takes a few minutes to blend up this sweet and tangy dressing, with a flavor that will complement salads and sandwiches with fruits and vegetables that are in season at all different times of the year.
1/4 cup dried figs
1/2 cup balsamic vinegar
1 teaspoon dijon mustard
1/4 cup olive oil
salt and pepper, to taste
An additional 1-2 tablespoons of balsamic vinegar and/or olive oil if you prefer a thinner consistency.
1. Combine the figs, balsamic vinegar, Dijon mustard, and olive oil in a blender and puree until smooth.
2. Season with slt and pepper to taste.
3. If you prefer a thinner, more pourable derssing, add another tablespoon or two of vinegar and/or oil and blend.
